RED VELVET CAKE 
1 1/2 c. sugar
1 1/2 c. cooking oil
1 tsp. vinegar
2 eggs
2 oz. red food coloring
2 1/2 c. plain flour
1 tsp. baking soda
1 tsp. salt
2 tbsp. cocoa
1 c. buttermilk
1 tsp. vanilla

Cream sugar and oil. Add eggs and beat well. Add vinegar and food coloring, beating all together well. Sift dry ingredients together and add milk, vanilla and beat well. Bake in 3 layers at 325 degrees for 30-35 minutes.

FROSTING:

1 stick butter
1 (8 oz.) cream cheese
1 tsp. vanilla
1 box powdered sugar
1 c. chopped nuts

Cream butter and cheese. Add sugar, nuts and vanilla.
