6 chicken legs, with thighs, or the parts of a 3 lb. broiler or fryer 2 c. tomato sauce 3/4 c. dry sherry 1/2 tsp. dried basil or 1/2 tbsp. fresh Pinch of oregano 1 clove garlic, minced Salt & freshly ground pepper to taste Rub chicken parts with oil and arrange them in baking pan. Bake in preheated 400 degree oven for about eight minutes, until skin browns slightly. Meanwhile, in a bowl, combine the tomato sauce, sherry, basil, oregano, garlic, salt and pepper. Pour over chicken and reduce oven heat to 375 degrees. Bake for about 35 minutes basting occasionally. Makes three or four servings. I cut this out of the paper. I made it only once and we loved it. |
