CHICKEN KIEV WITH SHERRY SAUCE 
2 whole chicken breasts, deboned, skinned
1 tbsp. chopped chives
1 tbsp. chopped parsley
1/2 clove garlic, minced
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. grated Mozzarella cheese

SAUCE:

2 tbsp. oil
1 tbsp. flour
1/2 c. dry sherry
1 c. chicken broth
2 tbsp. butter

Pound and flatten each breast. Sprinkle seasonings evenly over pieces. Cover surface with cheese. Roll up each breast. Secure with toothpicks.

Heat oil in pan. Saute breast until golden brown or about 8-10 minutes. Place in shallow baking dish. Preheat oven to 350 degrees.

Make sauce: Stir flour into drippings in fry pan. Stir until smooth. Add sherry, broth, stirring constantly. Thicken. Spoon over chicken. Bake 30 minutes. Serve. 4 servings.
