BEAN LOAF 
4 c. beans of your choice
1 raw grated carrot
1 tbsp. chopped parsley
1/2 c. tomatoes
2 eggs
Chopped celery stalks
1 tsp. basil
2 tbsp. vegetable oil

Cook onions in oil until lightly browned. Add to the cooked beans. Add remaining ingredients and mix well. Bake in greased loaf pan for 1 hour at 350 degrees. Serve with tomato sauce. A generous sprinkling of lemon juice will add zest. Serves 6.
