QUAKER OAT BRAN MUFFINS 
2 c. oats
1/4 c. firmly packed brown sugar
2 tsp. baking powder
1 c. skim milk
2 egg whites, slightly beaten
2 tbsp. vegetable oil

Heat oven to 425 degrees. Line muffin pan. Combine dry ingredients. Add milk, egg whites and oil. Mix until dry ingredients are moistened. Fill cups almost full. Bake 15 to 17 minutes until golden brown.

1/4 cup raisins and 1/4 cup nuts or

1/2 cup mashed bananas and 1/4 cup nuts or

1/2 cup fresh or frozen blueberries or

1/2 cup chopped apples and 1/2 cup nuts and 1 teaspoon cinnamon
