LEMON FROSTED APPLE CAKE | |
3 c. flour 1 tsp. salt 1/2 tsp. ground cloves 1/2 tsp. cinnamon 3 c. grated apples 2 tsp. baking soda 1/2 c. butter 2 c. sugar 2 eggs 1 c. chopped nuts 1/2 c. finely chopped nuts FROSTING: 1 lb. 10x sugar 1/2 tsp. lemon rind 2 tbsp. lemon juice 1 stick butter Grease and flour two 9 x 1 1/2 or 13 x 9 x 2 pan. Preheat oven to 350 degrees. Combine flour, salt, cloves, and cinnamon. Mix grated apples and baking soda in a medium sized bowl. Beat butter, sugar, eggs, until fluffy in a large bowl. Stir in flour mixture and apples alternately. Stir in 1 cup nuts. Bake at 350 degrees for 30-40 minutes. Cool on racks 10 minutes. Mix ingredients for frosting. Frost cake and use finely chopped nuts to cover. |
