BAKED PORK CHOPS & RICE 
4 - 6 center cut pork chops
Rice, uncooked
Onion slices
Tomato slices
Lemon, thinly sliced
Salt
Pepper
2 1/2 c. boiling water

Sear chops in skillet until golden brown. Place in roaster or similar pan with lid. Place chops in pan. Sprinkle rice in crevices between chops to a depth of the chops. Place a slice of onion, tomato and lemon on each chop. Sprinkle salt and pepper on rice. Add boiling water. Be sure it covers the rice. Add more if necessary. Cover. Cook at 325 to 350 degrees for 1 1/2 hours or until rice and pork chops are tender.
