EASTER COOKIES 
2 1/2 cups sifted all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 cup (1 stick) butter, softened
2/3 cup sugar
1 egg
1 1/2 tsp. grated orange rind
1 tbsp. orange juice
decorating icing (optional; use yellow, white, green, orange, etc.)

Sift together flour, baking powder and salt onto wax paper. Beat together butter and sugar in a large bowl until smooth. Beat in egg, orange rind and juice. Add flour mixture, a third at a time. Shape dough into a ball; flatten slightly. Wrap in plastic wrap. Refrigerate several hours.

Roll out on a lightly floured surface about 1/8-inch thick. Cut into bunny or chick shapes with 3-inch cutters. Repeat with second half of dough.

Bake at 350°F for 7 to 8 minutes. Cool and ice, if desired.
