CHEPPARY TOMATO FILLETS 
2 tbsp. butter
1 lb. fish fillets
1/2 tsp. salt
Dash of pepper
2 tbsp. chopped onions
2 tbsp. fresh parsley, minced
1 med. tomato, chopped
1/2 c. grated cheddar cheese

Melt butter in skillet, turn fillets in butter to coat all sides. Season fillets with salt and pepper. Sprinkle onions and parsley over fish, add tomatoes. Cover skillet, cook, low heat 7 to 9 minutes. Sprinkle 1/2 cup cheddar cheese, cover for 1 to 2 minutes.

MICROWAVE: Four to 5 minutes/high power in the first step. Add cheese and continue microwaving about 30 seconds. Let stand a minute or two before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
