BAKED CAULIFLOWER PARMESAN 
1 lg. head cauliflower
2 tbsp. chopped fresh parsley
2 c. chopped fresh tomatoes
1/4 tsp. pepper
1 onion, diced
1 garlic clove, minced
1/2 tsp. paprika
1/4 c. grated Parmesan cheese

Preheat oven to 350 degrees. Wash cauliflower and break into small flowerettes. In a covered casserole combine onion, parsley, garlic, and tomatoes. Add paprika and pepper and 3 tablespoons of grated cheese. Add cauliflowerets and mix thoroughly. Sprinkle with remaining tablespoon grated cheese. Cover and bake 40 minutes or until cauliflower is tender. Makes 6 servings.
