LAYERED MEDITERRANEAN PIE 
1 med. onion, chopped
1 clove garlic, minced
1 tbsp. butter
Fillo dough
1 lb. fresh spinach, washed and stemmed
8 oz. Mozzarella cheese
8 oz. sliced ham
1 (9 or 10 inch) pie pan
1 lg. sweet red pepper, cut into strips
4 beaten eggs

Saute onion and garlic in butter till tender. Steam spinach till wilted; drain well, pat dry. Stir cooked spinach into onion/garlic mixture. Prepare pie plate (or quiche pan) with 4 layers of Fillo (Phyllo) dough brushed with butter. Layer other ingredients as follows; ham, cheese, spinach, pepper strips. Pour eggs over entire pie. Cover with top crust of about 2 sheets of dough, seal edges and make slits for steam to escape. Bake at 400 degrees for 35 to 40 minutes.
