BASIC MUFFIN RECIPE 
2 c. flour
1/2 tsp. salt
1 egg, beaten
3 tsp. baking powder
2 tbsp. sugar
1 c. milk
3 tbsp. melted shortening

Sift dry ingredients. Combine egg, milk and shortening, stirring until moistened. Do not beat. Fill muffin pans 2/3 full. Bake in preheated 425 degree oven until golden brown. Makes 1 dozen.

Variations:

Apple Muffins: Add 1/2 teaspoon cinnamon, 2 tablespoons butter and 1 cup chopped apples.

Bacon Muffins: Use bacon drippings instead of butter and add 1/2 cup chopped crisp cooked bacon.

Berry Muffins: Add 1 cup fresh or drained canned sweetened berries.

Bran Muffins: Substitute 1 cup bran for 1 cup flour. Soak bran in milk for 5 minutes before mixing.
