BASIC MUFFINS - LOW FAT 
1 heaping tsp. butter
Scant 1/2 c. sugar
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 egg
1/2 tsp. vanilla
2/3 c. milk

Cream butter and sugar; add beaten egg, milk and remaining ingredients. Mix until smooth. Any 1 cup fruit can be added. Bake at 400 degrees for 12 to 15 minutes.

This recipe inspired me to create my own. Light olive oil instead of butter, 1/4 (or more) c. agave syrup instead of sugar, egg white instead of yolk, 1 tsp. vanilla instead of 1/2 tsp. Mix dry and wet ingredients separately, then mix.
