SWEET POTATO PANCAKES 
4 med. sweet potatoes (1 1/4 lbs.)
1 slightly beaten egg
2 green onions, chopped
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
Cooking oil

Peel potatoes. Coarsely shred and place potatoes in cold water; drain well and pat dry with paper towels. In large mixing bowl combine all ingredients and mix well.

In a 12 inch skillet heat 1 tablespoon oil over medium high. Drop potato mixture by tablespoon and fry 2-3 minutes on each side; drain on paper towels.
