PRALINE YAM CASSEROLE 
4 med. yams
2 eggs
1/2 c. brown sugar, divided
2 tbsp. butter, melted
1/2 tsp. salt
1/2 c. pecans, halves
1/4 c. butter, melted

ORANGE SAUCE:

1/3 c. sugar
1 tbsp. cornstarch
1/8 tsp. salt
1 tsp. orange peel, grated
1 c. orange juice
1 tbsp. lemon juice
2 tbsp. butter

Cook yams (mash), beat in eggs, 1/4 cup brown sugar, butter and salt. Spoon mixture into buttered casserole. Arrange pecan halves on top. Sprinkle with remaining 1/4 cup brown sugar. Drizzle with 1/4 cup melted butter. Bake uncovered at 375 degrees for 20 minutes.

TO MAKE SAUCE: Combine sugar, cornstarch, salt, orange peel, orange and lemon juice in saucepan. Cook until thick. Stir in butter, serve warm sauce over casserole.
