STRAWBERRIES, PEACHES AND CREAM
PARFAITS
 
1 env. unflavored gelatin
2 tbsp. cold water
1/4 c. boiling water
1 1/4 c. lowfat cottage cheese
1/2 c. canned evaporated skim milk
1/4 c. frozen apple juice concentrate or mild honey
1 1/2 tsp. vanilla extract
2 1/2 c. fresh or frozen strawberries
1 1/2 c. fresh or canned peaches, sliced or cut into good sized chunks

In small bowl, soften gelatin in cold water. Add boiling water and stir until completely dissolved. In blender, blend gelatin mixture with remaining ingredients, except the fruit. Blend until smooth. Stir in the strawberries, including juice if any. Mix well. Arrange most of the peaches in the bottom of 6 parfait glasses. Pour blender contents over peaches. Refrigerate until firm, at least 2 hours. If kept longer - cover with saran wrap.
