LEMON MUFFINS 
2 c. flour
1/2 c. sugar
1 tbsp. baking powder
1 tsp. salt
1/2 c. butter
1/2 c. fresh lemon juice
2 lg. eggs
2 tbsp. finely grated lemon rind

Heat oven to 400 degrees. Combine flour, sugar, baking soda, and salt. Blend well. Melt butter, remove from heat and stir in lemon juice, eggs, and lemon rind. Stir egg mixture into dry ingredients and blend just until moistened. Spoon into greased muffin cups and sprinkle with sugar (optional). Bake 15-20 minutes until lightly browned.
