IRISH SODA BREAD 
4 c. flour
3 tbsp. sugar
1 tbsp. baking powder
1 tsp. salt
3/4 tsp. baking soda
6 tbsp. butter
1 1/2 c. raisins
1 tbsp. caraway seeds
2 eggs
1 1/2 c. buttermilk

Grease a 2 quart casserole. In a large bowl mix flour, sugar, baking powder, salt and baking soda together. Cut in butter. Stir in raisins and caraway seeds. In medium bowl, beat eggs slightly with fork. Remove 1 tablespoon of egg to brush on top of bread. Stir buttermilk into remaining egg; stir into flour mixture just until moistened. Knead about 10 times to mix dough thoroughly. Shape into a round ball, place into greased casserole and brush with reserved egg. Bake at 350 degrees for about 1 hour and 20 minutes. Remove from casserole and cool on rack.
