APPLE STREUSEL COFFEE CAKE | |
1 c. flour 1 tsp. baking powder 1/4 tsp. baking soda 1/8 tsp. salt 1/4 c. butter 1/2 c. sugar 1 egg or 1/4 c. egg substitute 1 tsp. vanilla 3 tbsp. yogurt, plain 2 c. thinly sliced apples TOPPING: 1/4 c. flour 2 tbsp. brown sugar 1/2 tsp. cinnamon 2 tbsp. butter Spray 8 inch round or square pan with non-stick cooking spray. Combine flour, baking powder, soda, and salt. In another bowl beat butter and sugar until light and fluffy. Add egg and vanilla. Blend well. Alternately add dry ingredients and yogurt to sugar mixture, beating well. Spread batter in pan and arrange apple slices over the top. Crumble topping ingredients together and spread over dish. Bake at 350 degrees for 35 to 45 minutes until toothpick inserted in center comes out clean. After baking (optional) - drizzle with 3 to 4 tablespoons of prepared caramel topping. Serves 8. |
