MOCK CHOP SUEY CASSEROLE 
1 lb. ground beef
3/4 c. chopped onion
2 c. chopped celery
1 (10 3/4 oz.) can condensed cream of chicken soup
1 (10 3/4 oz.) can condensed cream of mushroom soup
1/2 c. uncooked white rice
2 c. boiling water
1 tbsp. soy sauce
1 (5 oz.) can chow mein noodles

Brown ground beef in a skillet; drain off excess fat. Combine with remaining ingredients, except chow mein noodles. Put into a 9x13 inch baking dish. Bake, covered, at 350 degrees for 45 minutes, or until rice is tender. Uncover; sprinkle with chow mein noodles. Bake an additional 10 minutes, or until noodles are heated through. 6 servings.
