MOTHER'S FAVORITE SUGAR FREE
LEMON COOKIES
 
1 stick butter
1 tbsp. liquid sweetener or 12 saccharin tablets dissolved in 1 tsp. water
1 egg, beaten
1 tsp. vanilla
1 tsp. grated lemon peel
1 c. flour
1/2 tsp. baking soda
1/4 tsp. salt

Cream butter. Add sweetener; egg, vanilla, lemon and beat well. Combine flour, soda, and salt. Add to creamed mixture and mix well. Drop by teaspoons onto ungreased cookie sheet. Press flat with fork. Press pecan half on top if desired. Bake at 375 degrees for 8-10 minutes. Makes 3 dozen.
