CHOCOLATE MERINGUES 
2 lg. egg whites
1/8 tsp. cream of tartar
1/2 c. confectioners' sugar
1 1/2 tsp. cornstarch
3 oz. semi-sweet chocolate, grated coarse.

In a bowl with electric mixer beat egg whites with a pinch of salt until foamy. Add cream of tartar and heat until they hold soft peaks.

Sift confectioners' sugar with cornstarch over egg whites beating mixture thoroughly. Fold in chocolate gently but thoroughly. Drop heaping tablespoons of mixture onto a baking sheet lined with parchment paper and bake in middle of preheated 300 degree oven for 30 minutes or until they are firm when lightly touched.
