MICROWAVE POTATOES 
Approximately 2 lb. potatoes, sliced
1 med. onion, sliced thin
3-4 tsp. butter
Salt and pepper to taste

Place half of butter on the bottom of a microwave-safe baking dish. Layer half the potatoes, half the onions, then repeat. Top with remaining butter. Sprinkle with salt and pepper. Cover. Microwave about 20 minutes, stirring after 10 minutes, until potatoes are tender.

These potatoes can be topped with sour cream or chip dip or eaten just like they are. Either way they're great. They are also good with barbecued food like chicken or steak.

Since microwave ovens vary in power, you may need to adjust your cooking time.
