SUGARLESS DATE COOKIES 
1/2 c. butter
1 egg
2 tsp. vanilla
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
1 c. (8 oz.) pitted dates, chopped
1 c. shredded coconut
1 c. chopped nuts

Cream butter, egg, and vanilla. Mix the dry ingredients and the dates, nuts and coconut thoroughly before adding to the butter and egg. Blend both mixtures thoroughly. Form dough into 2 (1 1/2 inch) rolls. Wrap in waxed paper or foil.

Chill in freezer overnight or up to a month. Slice with sharp knife into 3/8 inch slices (while frozen). Place on lightly greased cookie sheet. Bake at 350 degrees for 12 minutes. 5 dozen.
