FLOUR TORTILLAS | |
5 c. flour 3 tsp. salt 2 tsp. baking powder 3/4 c. shortening 1 1/3 c. warm to hot water Mix flour, salt and baking powder. Knead in shortening until mixture becomes grainy. Add water a little at a time, kneading dough to form a ball. Cover with a towel and let stand for 15 minutes. Next, preheat ungreased griddle to medium temperature. Break off pieces of dough to form small balls. Then flatten the balls to biscuit size. Next, with a rolling pin, start rolling from center out, forming a circle of about 6 to 8 inches in diameter, on a lightly floured surface. Turn tortillas as you roll, stretching as you peel it up. Then lay tortilla flat on hot griddle. Cook tortillas almost as pancakes, until they blister on the uncooked side. Turn tortilla over with spatula. Tortillas usually take about 20 to 30 seconds on each side to cook. If tortilla is burning or cooking too fast, turn fire down. Makes 18 tortillas. |
