PIZZA PORK CHOPS 
4 pork chops, cut 3/4 inch thick
1 sm. onion, chopped
3 tbsp. butter
1 (8 oz.) pkg. (2 c.) herb seasoned stuffing mix
1/2 c. water
1/4 tsp. dried oregano, crushed
1 (8 oz.) can pizza sauce
1 (3 oz.) can sliced mushrooms, drained
1 (4 oz.) pkg. shredded mozzarella cheese

Trim excess fat from chops; set chops aside. In medium saucepan cook onion in butter until tender, but not brown. Add stuffing mix, water, and oregano to cooked onion; stir until well combined. In a 12x7 1/2x2 inch baking dish divide stuffing mixture into 4 mounds (put about 1/2 cup stuffing in each mound and shape with your hands). Place a pork chop atop each stuffing mound. Pour the pizza sauce over the pork chops. Sprinkle the drained mushrooms atop the sauce. Cover with foil and bake in 350 degree oven about one hour or until the chops are tender. Sprinkle chops with shredded cheese. Makes 4 servings.
