SOUTHERN POTATO SALAD 
Hellmann's, Best Foods or Duke's mayonnaise works best!

3 lb. Yukon Gold potatoes
4 eggs
1/2 green pepper, finely chopped
1 celery stalk with leaves, finely chopped
1 small onion, finely chopped
1/2 cup mayonnaise (or 1 cup if omitting the sandwich spread)
1/2 cup sandwich spread (Miracle Whip)
1/4 cup sweet relish
1 tbsp. sugar
salt, pepper, paprika, celery salt (to taste)

Boil potatoes in salted water until tender. Peel potatoes with hand under cold water. Cut into fours and place in refrigerator until chilled.

Combine all ingredients and mix except for the potatoes and eggs. Dice potatoes into cubes, and chop eggs (not too small). Fold mayonnaise mixture into the potatoes and eggs. Cover and place in refrigerator until serving.
