RIGATONI SAUCE 
1 sm. onion, minced
3 tbsp. olive oil
9 c. water
1 1/2 tsp. oregano
1 bay leaf
1/3 c. sugar
1 clove garlic, minced
3 (6 oz.) cans tomato paste
2 tsp. fennel seed
1 tsp. salt
1 1/2 lb. ground beef

Brown onion and garlic in hot olive oil. When the onion is transparent add ground beef and brown. Drain most of the oil when meat is brown. Add tomato paste, water, seasonings. Bring to a boil. Heat and simmer for 2 hours.

This is a super sauce to serve over rigatonis.
