HAM AND BROCCOLI CASSEROLE 
1 c. rice, cooked
2 (10 oz.) pkgs. cooked frozen broccoli
6 tbsp. melted butter
2 c. fresh bread crumbs
2 c. chopped onion
3 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
2 c. milk
1 lb. cooked, chopped ham
6 slices American cheese

Spoon rice into greased casserole. Cover rice with broccoli. In a bowl combine 2 tablespoons butter and bread crumbs. In a frying pan cook onions in remaining butter until soft. Stir in flour, salt, and pepper; cook, stirring constantly, until mixture bubbles.

Stir in milk; continue cooking and stirring until mixture thickens and boils for 1 minute. Add ham; heat 1 minute. Pour over broccoli in casserole. Cover with cheese. Top with bread crumbs and bake at 350 degrees for 45 minutes. Serves 6.
