ZUCCHINI CAROB BREAD 
1/2 c. butter
1/2 c. oil
1 1/2 c. brown sugar
2 eggs
1 tsp. vanilla
1/2 c. buttermilk (or 1 1/2 tsp. lemon juice to make 1/2 c. milk)
2 1/2 c. flour
1 tsp. baking soda
1/2 tsp. each salt, baking powder, cinnamon and cloves
2 c. grated zucchini
1 c. carob chips

Cream butter, oil and sugar. Beat in eggs, vanilla and buttermilk. Combine all dry ingredients and add to mixture. Beat with electric mixer and fold in zucchini and chips. Turn into well-greased 9 x 13 baking dish. Bake at 325 degrees for 40 to 45 minutes.
