PINEAPPLE CAKE 
2 c. all-purpose flour
1 (20 oz.) can crushed pineapple
1 c. brown sugar
1 c. walnuts
2 eggs
1 c. sugar
2 tsp. baking soda

Beat eggs until light and fluffy. Add pineapple (undrained) and other ingredients. Mix all well by hand. Then stir in 1 cup chopped walnuts and spread evenly in ungreased 13 x 9 x 2 inch pan. Bake at 350 degrees for 45 or 50 minutes until toothpick inserted in middle comes out clean. Let cake cool.

CREAM CHEESE GINGER FROSTING FOR PINEAPPLE CAKE:

1 (3 oz.) pkg. cream cheese
1/4 c. butter
2 c. powdered sugar
1 tsp. vanilla
1/2 tsp. ground ginger

Use electric mixer to mix cream cheese and butter together until smooth; add vanilla, and then gradually add powdered sugar with ground ginger. Spread on pineapple cake.
