CHICKEN SCAMPI | |
1 lb. boneless chicken cutlets Flour, garlic powder 4 tbsp. butter 1/4 c. oil 4 tbsp. butter (additional) 3 garlic cloves, minced 1 c. chicken broth 2 tbsp. chopped parsley 1/2 lb. fresh mushrooms, sm. Cut chicken into small strips. Dredge in flour and garlic powder. Melt flour, tablespoons of butter and oil in a large skillet. Saute chicken until lightly browned. Remove chicken from pan, combine remaining ingredients (butter, garlic, broth, parsley and mushrooms). Heat until butter melts. Add chicken and simmer covered until chicken is done, about 15 minutes. Serve with rice (plain or pilaf). Freezes well. |
