4 tbsp. butter 4-6 cloves garlic 1/4 tsp. basil 1/4 tsp. oregano 1 c. chicken broth or white wine or 1 c. water 2-3 lb. chicken, cut up with skin removed Angel hair spaghetti Fresh Parmesan In skillet melt butter with garlic, basil, and oregano. Add chicken. Brown on both sides. Add chicken broth, water, or wine and simmer on medium heat until tender, approximately 40 minutes. Cover pan while simmering. When done, cook spaghetti and drain. Put on platter. Put chicken over pasta, pour sauce from pan over chicken and pasta. Sprinkle with fresh Parmesan cheese. |
