CHICKEN SCAMPI | |
4 whole chicken breasts 1 head broccoli 1/4 lb. butter 1/3 c. olive oil 1/2 lg. onion, sliced 1 lg. green pepper 1/2 lemon juice 1 tsp. salt 1/2 tsp. pepper 1/4 c. Parmesan cheese 1 lb. linguini Wash, debone, and deskin chicken. Cut in bite size pieces. Cut broccoli and green pepper into bite-size pieces. Cook broccoli in microwave, according to your ovens directions. Only cook so that it is still crisp (can be cooked on stove in water). In large fry pan, place butter and oil over medium heat. Add onion and green pepper; saute about 5 minutes. Remove from pan and reserve. To fry pan, add chicken; cook about 5 minutes. Return onion and green pepper to pan; add broccoli and saute about 5 minutes more. Sprinkle with lemon juice, salt, and pepper. Cook linguini; drain. Place linguini in serving dish; top with chicken vegetable mixture and sprinkle with Parmesan cheese. |
