SHREDDED POTATOES 
8 med. potatoes
1 lg. onion or 4 to 5 stalks scallions cut
Garlic salt to taste
Seasoning salt to taste
Pepper
3 pt. sour cream
3/4 lb. sharp cheddar
3/4 lb. longhorn or mild cheese

Boil potatoes until fork prick soft. Peel and shred (food processor best). Also shred cheese and onion. Mix in a large bowl adding all the salts and pepper to season. Stir in sour cream and mix thoroughly. Place in an oblong glass baking dish, cover and bake for approximately 1 3/4 hours at 350 degrees. Remove foil and bake another 15 minutes or until golden brown. A hit every time.
