PUMPKIN PIE | |
2 unbaked pie shells 1 (No. 2) can pumpkin 1 1/2 c. light brown sugar 4 eggs, well beaten 3 tbsp. melted butter 2 tbsp. maple syrup or cooking molasses 1 1/4 tsp. salt 1 1/2 c. evaporated milk 1/2 c. milk 2 tbsp. pumpkin pie spice or 4 tsp. cinnamon 1 1/2 tsp. ginger 1 tsp. nutmeg Add in order given; stir well and fill 2 unbaked pie shells. Bake 10 minutes at 450°F. Reduce heat quickly to 325°F to 350°F and continue baking for about 1 hour. I do not like under baked pies. This pumpkin pie should look done, and crust well browned. Aunt Della Overpeck gave me this recipe when George and I were first married. It is very good and is the recipe I have always used. |
