CRISP OATMEAL COOKIES 
3 c. oatmeal (minute)
1 c. light brown sugar, firmly packed
1 c. flour
1 c. melted butter (2 sticks)
1/4 c. boiling water
1 tsp. baking soda
1/2 tsp. salt (optional)

Mix flour, oatmeal, sugar, and salt. Add melted butter and mix well. Dissolve soda in boiling water and add to mixture. Mix well. Mixture will be soft. Refrigerate if needed to form rolls of dough. Form into 2 rolls on wax paper, about 10 inches long. Chill in freezer until ready for use. Slice about 3/8 inch and bake on ungreased cookie sheet in 350 degree oven for 7-10 minutes. Will spread when baking. Yield: Approximately 7 dozen.

Note: Children love these cookies. They are also good for busy people to make.
