NEIMAN-MARCUS CREAM PIE 
9 inch baked pie shell
1/2 c. sugar
1/4 tsp. salt
3 tbsp. flour
1 1/2 c. milk
2 eggs
1 tsp. butter
1/2 tsp. vanilla
1 1/2 c. heavy cream, whipped
3 med. bananas, sliced

Prepare pie shell. In small bowl combine sugar, salt, and flour. Stir in 1/2 cup milk to make a smooth paste. Put remaining milk in top of double saucepan. Scald. Stir in paste; cook over hot water, stirring constantly, until thickened and smooth.

In small bowl, beat the eggs, stir in a little of the mixture. Return to rest of hot mixture cook custard, stir constantly for 5 minutes. Remove from heat. Stir in butter and vanilla. Cool custard, stirring occasionally. Add 1/4 cup of sugar to whipped cream. Fold half of cream into custard. Arrange half of bananas in pie shell. Cover with half of the custard. Top with remaining bananas. Cover with remaining custard. Spread with custard. Top with remaining cream. Chill 1 hour.
