CARROT KUGEL | |
3 lg. carrots 1 1/4 c. flour 1/2 c. brown sugar 2/3 c. vegetable oil 1 egg 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 1 tbsp. orange juice 1 tsp. lemon juice 1/4 tsp. cinnamon Grate carrots; let stand. In mixer cream brown sugar and oil. Add egg. Sift together flour, baking soda, baking powder and salt. Add to ingredients in mixer. Next add orange juice, lemon juice, and cinnamon. Fold in grated carrots last. Pour into oiled loaf or teflon pan. Bake at 325 degrees for 25 minutes or test with toothpick. |
