ITALIAN LATER SALAD 
1 head Iceburg lettuce, shredded
1 red onion, thinly sliced
1 jar bacon bits
1 c. carrot rounds, thinly sliced
1 sm. head cauliflower, broken in small pieces
1 (10 oz.) pkg. frozen peas, not thawed
1 can black olives, sliced
1/2 c. Parmesan cheese, grated
1 c. plain yogurt
1 box seasoned croutons
Dry Italian dressing mix, (use to taste)

Layer vegetables in bowl. Mix cheese, yogurt and Italian dressing. Drop in globs over vegetables. Sprinkle bacon bits over the dressing. Refrigerate overnight. Add croutons at serving time. Toss well before serving.

If you like your salad highly seasoned, you may use the entire package of seasoning mix. I only use a portion.
