SHRIMP (OR CHICKEN) CACCIATORE 
1 lb. shrimp or chicken breast, cubed
1/2 c. chopped onion
1 med. green pepper, cut into strips
1 clove garlic, minced
2 tbsp. butter
1 can (28 oz.) whole tomatoes
1 can (8 oz.) tomato sauce
1/2 tsp. oregano
1/2 tsp. basil
1 1/2 c. dry Minute Rice or 3/4 c. dry reg. rice

Saute meat with onion, green pepper and garlic in butter. Add tomatoes, sauce and seasonings. Bring to a full boil; stir in rice. Cover and cook until rice is done. Fluff with fork.

MICROWAVE: Mix meat, onion, garlic and butter in dish. Cover and cook high 5 minutes. Stir in remaining ingredients; cover and cook 5 to 6 minutes or until done. Let stand 5 minutes and fluff with fork. 4 servings.

SHRIMP: 370 calories, 960 sodium, 170 cholesterol per serving. CHICKEN: 400 calories, 880 sodium, 66 cholesterol per serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
