VEAL PARMESAN 
1 1/2 lbs. veal cutlets
1/4 c. butter
1 clove garlic, crushed
Salt and pepper to taste
1/2 c. sherry
1/2 c. grated Parmesan cheese
1/4 lb. mushrooms, sliced

Pound veal flat and brown on both sides in the butter over high heat. Put veal into baking dish and keep warm. Saute the garlic and mushrooms in the same saucepan as the veal over low heat for 5-10 minutes. Remove from heat and add sherry, grated Parmesan cheese, and salt and pepper to taste. Pour sauce over veal cutlets. Bake in a 350 degree oven until meat is tender. Serves 4.
