POPPY SEED MUFFINS 
3 c. flour
2 1/4 c. sugar
1 1/2 tsp. baking powder
1 1/2 tsp. salt
1 1/2 c. oil
1 1/2 c. milk
3 eggs
1/4 c. poppy seeds
1 1/2 tsp. almond extract

Combine flour, sugar, baking powder and salt. In another bowl whisk oil, milk, eggs and almond extract until smooth. Add dry ingredients and mix only until moistened. Stir in poppy seeds. Bake 30 minutes at 350 degrees. Makes 12 muffins.
