"AUNT NANCY'S" STACK CAKE 
2 c. dark brown sugar
1 c. shortening (lard, butter, butter, or Crisco)
3 eggs
3 c. flour (all purpose)
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda dissolved in 2 tbsp. boiling water
2 c. dried apples

Cream shortening and sugar. Add eggs. Sift in flour with spices. Add soda in water. This makes a sticky dough so it is easier to work with if you put it in the freezer until it is easier to handle, 30 to 40 minutes. Divide into six equal size balls. Flour your hands and pat out each ball, on greased cookie sheet until the size of eight inch plate. Bake at 375 degrees for about 10 minutes. Do not overbake. Remove from cookie sheet (loosen cake with spatula) flip cookie sheet over and allow cake to drop off. Cool. Arrange in layers with cooked dried apples spread between layers.

Dried apples:

Cook dried apples with a little sugar and enough water to cover until mushy. Cool before spreading on cakes.
