CHEDDAR CHEESE - VIDALIA ONION

6 medium-size Vidalia onions, thinly sliced
1/4 c. butter
1/4 c. all-purpose flour
2 c. milk
2 c. Cheddar cheese, shredded
1/2 tsp. salt

Place onions in 2-quart casserole that has been greased; set aside. Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly until thickened and bubbly. Add cheese and salt, stirring until cheese melts and sauce is smooth. Pour cheese sauce over onion. Bake, uncovered in 350 degree oven for about 45 minutes. Makes 6 servings.
