CAJUN BLACKENED CHICKEN 
6 chicken breast halves
1 c. butter
1 1/2 tbsp. paprika
1 tsp. salt
1 1/2 tsp. onion powder
1 1/2 tsp. garlic powder
1 1/2 tsp. cayenne
1/2 tsp. white pepper
1/2 tsp. black pepper
1/2 tsp. thyme leaves
1/2 tsp. oregano

Mix all ingredients except chicken and butter. Dip chicken in it. Immediately before cooking, melt butter and dredge chicken in it. Cook chicken on high heat, 10 minutes each side.

Really liked this recipe...but I would have used less butter--had quite a bit left over and seemed wasteful. The flavor was great---made pesto and pasta and tossed the chicken..Yummy.
