TURKEY HOT BROWN 
2 tbsp. butter
2 tbsp. flour
1 c. milk
1/4 c. grated American or cheddar cheese
Salt & pepper
4 slices toast
Turkey breast for 4 servings
8 strips bacon, fried crisp
4 tbsp. grated Parmesan cheese

Melt butter in saucepan; add flour and stir to combine well. Add milk, slowly, whisking constantly over medium heat. When sauce thickens, add cheese and stir to melt. Season with salt and pepper to taste. Place toast on heat proof platter or baking dish. Top with turkey and sauce. Place two strips bacon on each and a tablespoon Parmesan on each sandwich. Broil until cheese has browned and sauce bubbles. Serve immediately. Serves 4.
