ROMAN APPLE CAKE 
1 c. granulated sugar
1/2 c. brown sugar
1/2 c. shortening
2 eggs
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1 c. milk
1/2 c. raisins
2 c. (about 3) apples, peeled and cut fine

Cream sugars and shortening together, then add eggs. Blend the dry ingredients and add to the other mixture alternately with the milk. Then fold in the raisins and apples. Pour into a 9 x 13-inch greased pan. Cover with a mixture of 1/2 cup granulated sugar, 1/2 teaspoon cinnamon and nuts, if desired. Bake about 50 minutes in 350 degree oven.

Note: If you "dust" the raisins with a small amount of flour before adding them they will not "clump" or all fall to the bottom. Serves 12-14.
