TOMATO RELISH 
1 peck tomatoes, peeled & finely chopped
2 c. onions, chopped
3 green sweet peppers, chopped fine
3 red sweet peppers, chopped fine
1/4 c. salt
5 tbsp. whole pickling spice, tied in sock
1 tsp. chili powder
2 1/2 c. sugar
1 c. vinegar

Mix all together, boil until thick (about 2 hours). Taste while cooking. Add 1 teaspoon chili powder. Yields 13 pints.
