ORANGE FLAVORED YAMS WITH
PRALINE TOPPING
 
2 (40 oz.) cans yams, drained
1/4 c. brandy
2/3 c. fresh orange juice
1 tbsp. grated orange rind
1 tsp. salt
1/2 c. brown sugar
1/2 tsp. ground ginger
1/4 tsp. freshly ground black pepper
3 egg yolks

PRALINE TOPPING:

2/3 c. brown sugar
1 1/2 c. chopped pecans
1/2 tsp. ground cinnamon
1/2 c. butter, melted

Preheat oven to 350 degrees. Butter a 12"x9"x2" baking pan. Mash yams until smooth. Add brandy, orange juice, orange rind, salt, sugar, ginger, pepper and egg yolks. Mix well and spoon into prepared dish. Mix topping ingredients together thoroughly. With a rubber spatula, spread evenly over yams. Bake 45 to 60 minutes until brown and bubbly. 12 servings.
